Ultimate Egg Mayo

I absolutely love a good egg mayo sarnie but always held off from making my own as I assumed i'd be horrified once I knew the actual amount of mayo which goes in. But, if you're as clueless as I was fear not! The yolks of the eggs is what makes this so creamy and you only need a fraction of the mayo that you think you do. The end result is rich and creamy (and not too pongy I promise!) Peeling and mashing the eggs is also weirdly satisfying (don't judge me...) and something I think mini sticky jam hands everywhere can get involved in.
Makes 2
INGREDIENTS
4 slices of your favourite bread
2 eggs, medium boiled
3 spring onions
1/2 Tbsp mayo
1/2 Tsp mustard
1/4 tsp honey
Pinch of salt
KIT LIST
Sauce pan
Mixing bowl
PREP
Chop your spring onions
Medium boil your eggs (around 6-7 mins) then plunge them into cold water to make easier to peel
METHOD
Peel your eggs, it's easier if you firmly roll these against a hard surface to get the shell to crack before you start peeling. Once peeled, rip the eggs into pieces with your hands and drop into the mixing bowl.
Add your spring onions, mayo, mustard and honey to the bowl with the eggs. Give everything a good mix. Add a pinch of salt if you think it needs it.
That's all there is to it! Use the filling to make your sandwiches and enjoy!
